Firehouse Pizzeria Brings a Bold New Culinary Experience to Downtown Rapid City

RAPID CITY, S.D. — A fresh wave of flavor is about to roll into Downtown Rapid City. Firehouse Properties has officially announced the opening of Firehouse Pizzeria, a brand-new dining experience located inside Firehouse Wine Cellars at 620 Main Street. The pizzeria opens to the public Monday, November 24, and will operate seven days a week from 4 p.m. to 9 p.m.

The project represents a major investment in culinary innovation for Firehouse, bringing a completely new style of pizza — one not previously seen in the region — to the heart of downtown. Backed by extensive training, new equipment, and a chef-driven approach to ingredients, the pizzeria signals a bold expansion for one of Rapid City’s most iconic hospitality brands.

A Vision Rooted in Technique, Craft, and Creativity

Firehouse Pizzeria was developed under the guidance of New York–based chef and culinary consultant Jake Sawabini, who worked closely with the Firehouse team to establish a menu and process based on real technique and craftsmanship.

“Firehouse brought me in with a clear vision: to build something rooted in real technique and craftsmanship,” Sawabini said. “Training this team has been a privilege, and I’m incredibly proud of the level of skill and consistency they’ve developed. What they’re offering here is something truly unique to Rapid City.”

The culinary program doesn’t just lean on flavor — it’s built on a scratch-made approach rarely seen at this level. Everything from dough development to ingredient sourcing and pizza assembly has been built from the ground up under Sawabini’s direction.

Months of Development Behind Every Slice

Firehouse Pizzeria’s launch follows months of behind-the-scenes work, including intensive staff training, menu testing, equipment upgrades, and the creation of a scratch-based kitchen program.

“This project represents months of training, testing, and refining,” said Joe Rivera, General Manager of Firehouse Properties. “Everything we’re doing — from making dough in-house to developing new flavor combinations — is driven by a commitment to quality. We’re excited to add something new to downtown.”

The pizzeria’s menu leans into creativity with a lineup of specialty pies, bold flavor combinations, and playful names. Offerings range from herb-forward creations like Garden Ganja to smoky, barbecue-driven options like Pork You, and comfort-focused pies such as Roast Me Like One of Your French Girls and Shroom With a View. The menu also includes classic pies, build-your-own options, and dessert pizzas like Apple Bottom Dreams and S’More Than You Can Handle.

Several of the specialty combinations are completely new to the region, reflecting both traditional methods and inventive culinary direction.

A Shared Kitchen for a Growing Brand

The new pizzeria will also serve as the scratch-made kitchen for Firehouse Skybox Sports Bar, allowing the company to elevate its food program across multiple Firehouse properties simultaneously.
